Silo Restaurant - Brighton
Today is my birthday and we celebrated in style at Silo restaurant in Brighton. It is not the first time we have been here - we absolutely love it here.
Firstly, I love the story behind Silo .....
Silo was conceived from a desire to innovate the food industry whilst demonstrating respect; respect for the environment, respect for the way our food is generated and respect for the nourishment given to our bodies. This means that we create everything from its whole form cutting out food miles and over-processing whilst preserving nutrients and the integrity of the ingredients in the process.

They also have a zero waste philosophy ....
All our products that are delivered to us come in re-useable crates, food grade jerry cans, pails urns or containers. All that isn't consumed by our customers (or us) is fed into our aerobic digester which can generate 60kg of compost in just 24 hours. As our use for it is so minimal due to the way our menu is conceived, we offer its services to our neighbours, both residential and commercial, and that way we can share the benefits of waste reduction across our local community.
We love their freshly baked sourdough (they have their own flour mill) with creamy butter (they churn their own butter) and the kombucha is delicious - Silo even has their own brewery where they create fermented drinks from plants, herbs, vegetables and fruit.
Their menu is simple and short which I always think is a great sign where quality of ingredients is key. To share what we ate for brunch today - a few small plates which we all shared:
Coddled egg, kimchi and dulse
Liver parfait, pickled shitakes on sourdough toast.
Goats curd on sourdough with tomatoes.
Chickpea and cabbage
Wholemeal Choux with
crème fraîche and lemon.
All washed down with kombucha.
We went with a 9 week old baby and a toddler and they were super accommodating with the buggy. The staff are so pleasant and friendly and the vibe is great. If you are ever in Brighton, I highly recommend.
